This past week flew by so fast, and Yalda night is right around the corner, you know. We're getting ready for both Yalda and Christmas and if you're looking for some more festivities this season right before Christmas, you may also want to get a couple of pomegranates and make my pomegranate recipes!

This year for Yalda night - Winter Solstice which is the longest night of the year, we have an Iranian-American menu which means this beautiful pomegranate guacamole is going to happen! It's amazing how the combination of East and West can turn out to be so delicious all the time!

Thispomegranate walnut guacamole might seem new, strange or weird but don't hate it until you taste it. Trust me, it's a whole new dimension of guacamole. One that you will fall in love with. Promise. Think of it as guacamole with crunchy walnuts and tiny and sweet tart ruby jewels. Pretty and delicious!

Now, I think we have all thought about this question: What's a simple guacamole recipe?For us, the simple guacamole is mashed avocados with diced red onion, lime, salt and pepper. I spread this on toast and call it avocado toast or use it as a spread on my sandwich or just have it with tortilla. Some times, I elevate it with the addition of walnuts, pistachios, or pomegranates!

If you are an avocado junkie, you know how precious they are and probably you too, buy a dozen of them if you see them cheap. So it's probably very upsetting for you when you make guacamole then refrigerate the rest only to see it has gone fully brown and ugly after a day. Why do bad things happen to good people?

Why does guacamole turn brown?

When oxygen contacts avocado or guacamole, the oxidation process happens which will result the guacamole to turn brown. To prevent guacamole from turning brown, it's best to cover the surface with a plastic wrap. Not the serving bowl, but the surface. You want the plastic wrap to touch the surface so there is no contact with oxygen. Rubbing lime or lemon on the surface of a cut avocado will also delay the oxidation process.

Knowing this, try to make the guacamole just as much as you would want to eat, because none of us wants brown guacamole. Nothing is sadder that throwing that delicious concoction into the trash. And we all know wasting food is very, very bad.

Notes and tips

  • This simple guacamole recipe does not call for tomatoes or chili peppers. If you like the guacamole to be hotter, add ½ chili pepper and add more if needed.
  • For more flavor, add ½ cup salsa verde to the guacamole before topping it with pomegranate arils and walnuts.
  • To choose a good avocado, check the stem on top. Gently press down the stem using your index finger. If the stem sinks easily with minimum resistance, then it's perfectly ripe but if it sinks too easily and feels like it's going to mush, then it's over ripe. And if it doesn't press down easily then it's not ripe.
  • You can use lemon juice instead of lime juice. A combination of both would be perfect, too.
  • Serve this pomegranate guacamole with tortilla chips or pita chips. Instead of topping the guacamole with pomegranate arils, you can mix them in the guacamole

Ingredients

  • 4 Hass Avocados Ripe
  • ½ cup Diced Red Onion
  • 1 Lime
  • ½ teaspoon Salt
  • ¼ tsp Black Pepper
  • ¼ cup Chopped Cilantro
  • ½ cup Pomegranate Arils
  • cup Chopped Walnuts
  • ¼ cup Crumbled Feta Cheese

Instructions

  • Start with cutting the avocados in half and remove the pit. Take out the flesh using a spoon and place in a bowl.

  • Using a fork, mash the avocado.

  • Add in diced red onion and mix.

  • Squeeze the lime and add the juice to the avocado and red onion.

  • Add in salt, pepper and cilantro.

  • Place a plastic wrap on the surface of the guacamole and refrigerate for 15-30 minutes.(You can skip this step if the avocados are cold.)

  • To serve, top the guacamole with pomegranate arils - see how to cut a pomegranate here, walnuts, crumbled feta cheese and some chopped cilantro.

  • Serve with tortilla chips.

Notes

Guacamole is better be served and eaten on the same day, but you can deseed the pomegranate the day before.
