Spanish Mulled Wine Recipe
Spanish Mulled Wine recipe or vino caliente, (hot wine) is a tradition in Spain as it is in many other countries and there's nothing better than a warming glass of this "spiced wine”, especially during the Christmas Season.

Ingredients
1 bottle of red wine (there is no need to use an expensive wine, even a cheap boxed wine will do)
1 Clementine or orange
4 strips of lemon peel
4 strips of clementine/orange peel
200 g caster sugar
1 cinnamon stick
1 vanilla bean, halved
1 teaspoon nutmeg
A shot of rum or brandy (optional, well not really)
Spanish Mulled Wine Recipe
Method
Squeeze the clementine juice into a saucepan and add the sugar and citrus peels.
Add the spices and bring the mixture to a boil, constantly stirring.
As soon as it boils add 1/2 cup of red wine. Allow it to simmer slowly until it is reduced to a syrupy consistency.
Add the rest of the bottle of wine, cover, and as soon as it is warm, serve. Don’t boil unless you want it to besinalcohol (non-alcoholic)!
If you want an extra kick add a shot or rum or brandy.
Garnish with orange slices and cinnamon sticks. Drink.
Make up your own unique version
Use white wine:This recipe is also delicious when made with a dry white wine.
Use a different liqueur:Instead of brandy, add in some Cointreau, bourbon or cognac.
Use a chai tea bag:In place of the cloves and star anise
