They're delicious, take less than 10 minutes of cooking time, and are perfect to make in a big batch and store for later too!

I'm always down for homemade snacks that are easy to make, yet big on flavor, and quite recently, I found this little pack of salt and vinegar almonds at the supermarket.

So of course, I HAD to try making it myself, and oh boy, I'm glad I did!

They turned out just as delicious as the packaged versions, if not better. And before I knew it, I had everyone in the family hooked- almost as much as our all time favorite way of enjoying almonds- Krokan!

What's So Great About the Recipe?

My favorite part about this salt and vinegar almonds recipe is the fact that they're so versatile and customizable.

I've seasoned them with just a bit of sea salt, but you can totally give them your twist too.

In fact, I recently tried making Tajin nuts using just 3 simple ingredients, and they turned out insanely delicious. That further inspired me to try a nut-free version of the recipe, and I put together some chili lime pepitas.

Nuts and seeds are an incredibly healthy snack option, and are an absolute must have to add to your diet, and this recipe is a good way to do just that.

Almonds: You'll need about 1 cup of fresh almonds for this recipe. Make sure you choose the best quality almonds, because they really do make a difference.

Salt: Just regular table salt should do the trick. You can also choose to use any other kind of salt like sea salt, jalapeno salt or even salt flakes depending on your personal preference.

Vinegar: I've used just enough vinegar to soak the almonds completely. It should be a little more than half a cup.

Place the almonds in a glass jar or container and fill it with vinegar, just until the almonds are submerged. Allow this to sit for up to 2 hours.

Drain the vinegar, dry the almonds and transfer them to a parchment paper lined Air Fryer basket. Sprinkle salt and air fry for 7-8 minutes or until crunchy.

Substitutions & Variations

  • I've used only almonds for this recipe, but you could also try replicating the same recipe with any other nut of your choice. Cashew nuts, pecans and peanuts are some good choices.
  • I also like to play around with the seasonings and add some Tajin seasoning, chili powder, paprika or cayenne to bring a bit of heat to the roasted nuts.
  • I've used white vinegar for this recipe, but you can also choose to soak the almonds in some apple cider vinegar to bring a bit of additional flavor to the nuts.

Malt vinegar can also be a great alternative to white vinegar, and can lend a delicious and yummy tart taste to the almonds.

How to Store the Leftover Salt and Vinegar Almonds

The best way to store your batch of salt and vinegar almonds is to transfer them to food safe airtight containers and store them in a cool, dark place.

These can stay fresh for weeks, if not months. If the almonds do end up losing their crunch factor, you can quickly microwave them for a few minutes, let them rest and they'll be crunchy again.

  • If you're not a pro at using the Air Fryer, it can be pretty easy to burn your food in there. Keep an eye on the almonds and make sure you remove them once they just start to turn slightly brown.
  • Remember to grease the Air Fryer basket with just a teeny bit of oil that has a high smoking point.
  • If you're making a big batch of these salt and vinegar almonds, resist the urge to dump them all together in the Air Fryer basket- they won't end up crunchy and crispy as you'd want them to be.
  • Make sure you spread the nuts in a single layer in the basket, and toss them midway through the cooking process.

If you don't have an Air Fryer, you can choose to roast the almonds in the oven. You can roast them in a preheated oven for about 20 minutes at 350 degrees. Remember to line your baking sheet with some parchment paper too!

Can I Toast the Almonds in a Pan?

You definitely can! Just make sure you stick to medium heat, and keep tossing the almonds frequently to make sure they're well roasted on all sides.
