Instant Pot Freezer Meals

I had never planned to do any Instant Pot Freezer Meals until the idea entered my head while I was making some curry for the slow cooker. It seemed like it took all day to prep the slow cooker, wait for it to cook and then bag it up for the freezer for later.

I was making my slow cooker chicken Balti recipe and everything felt like an effort.

I also had several other slow cooker curry recipes to do too.

I just wondered if I could do the whole lot in an hour instead using my Instant Pot and do a bigger batch of Instant Pot Freezer Meals with a curry theme.

I said to Dominic that I wanted to make 50 curry freezer meals in an hour for the Instant Pot and he told me I was mad. He hates curry and never believes me when I tell him other people like a good Indian curry too!

Like any typical woman I decided to show him that it was possible, but only with his amazing chopping and his amazing camera skills.

I then waited for my favourite chicken breasts to reduce in price at the supermarket and then I was all ready to go with my Instant Pot Freezer Meals!

I decided to write down what we paid for everything and to prove you can make 50 meals for $30 or less. Especially when you take into account what you already have at home.

A lot of us will already have several cans of tinned tomatoes in the cupboard, some tomatoes in the fridge and a big herb cupboard.

This is exactly what we paid along with what food we already had:

Meat

  • Chicken Breasts @ 7,00€

Fruit & Veg:

  • 2 Kilo Bag of Carrots @ 1,50€
  • Mixed Peppers @ 2,00€
  • 6 Kilos Tomatoes @ 6,81€
  • 1 Bag of Onions @ 0,69€

Dairy:

  • Greek Yoghurt @ 1,79€

Pantry:

We already had in the rest of the tinned tomatoes that we needed, all the seasoning and a few carrots and tomatoes at the bottom of our fridge.

As well as this pumpkin and butternut squash that we purchased the week before that we hadn’t got around to using.

Our grocery shop cost us just 23,39€ or converted into pounds is £20.40 or converted into dollars is $26.69.

Instant Pot Freezer Meals Money Saving Tips

The important thing to note here is that we waited until chicken breast was reduced price before we grocery shopped for our Instant Pot Freezer Meals. If we hadn’t chicken breast would have been double the price.

Or if we had not bought our vegetables from 2 different places to get the best price it would have cost us more.

Check out your pantry. We saved a lot by working with what we already had in. If you have lots of butternut squash and no pumpkin, then use more butternut squash. Mix and match to get the best price.

If you don’t have any curry seasonings at all. Go with a universal blend rather than having to buy 20 new spices.

Or go to a shop where you can just buy it by the tablespoon. I do that when I want turmeric as its very rare we use it and it’s a waste to buy a big jar.

Remember to shop the deals and you will easily be able to do our Instant Pot Freezer Meals for less than $30.

How to cut the costs down even further:

My cheapest curry to make was Pressure Cooker vegetable korma. It’s the most economical because it doesn’t reduce in size and has no meat so keeps the cost right down.

Compared to Pressure Cooker Chicken Balti. This reduces a lot in size due to it being a tomato sauce and can work out quite expensive.

If you want to do it for $20 then do 2 rounds of pressure cooker vegetable korma and no pressure cooker chicken Balti.

Because we are just doing a big portion of 5 different recipes it is easier to do it and you can easily manage it in an hour. The hard parts are mixing your marinades and doing some vegetable chopping.

But if you do prep while your first curry is cooking, stop prepping when a curry has just finished, then you can use your time wisely and easily fit in all these delicious Instant Pot curries in an hour.

Or if you have 2 Instant Pot Pressure Cookers then you could reduce it down to 45 minutes.

Instant Pot Freezer Meals – How We Did Our Freezer Meals

#1 Prep your seasonings

Peel the garlic and the ginger and grate or thinly slice it. Or take the lazy option and buy it minced. Peel and thinly dice the onions.

Place the marinades/seasonings into 5 separate shallow bowls for each of your curries that you are batch prepping:

Bowl #1 – Chicken Tikka Masala

Bowl #2 – Chicken Balti

Bowl #3 – Butter Chicken

Bowl #4 – Vegetable Korma

Bowl #5 – Basic Curry Sauce

#2 Prep your vegetables (part 1)

You’ve already done the onions, garlic and ginger which is a lot of the hard work already done. Next slice up the tomatoes and the peppers only into medium sized slices.

#3 Batch cook your Chicken Balti

You should have all the ingredients ready for this now, so that you can get it on and prep, while it is cooking.

Dump into the bottom of the Instant Pot:

  • 15 large Tomatoes, 2.5 large red peppers and 5 large chicken breasts
  • Season with salt and pepper
  • Add ½ your marinade ingredients and stir
  • Pour in ½ cup of water
  • Cook on high pressure for 7 minutes with quick pressure release
  • Remove the chicken and shred it
  • Add the rest of the marinade and blend the tomato and pepper sauce
  • Shred the chicken and stir the chicken into the Balti sauce
  • Place into freezer containers, clean out your Instant Pot and get ready for your next curry

#4 Prep your vegetables (part 2)

While the chicken Balti is cooking, get back to your vegetable prep. Peel and medium cube the carrots, butternut squash and pumpkin. Remove the seeds from the pumpkin and the butternut squash.

Load into bowls with a big bowl for each of the vegetables so that they are easy to access.

#5 Batch Cook Your Vegetable Korma

Once the Instant Pot is clean, you can make your vegetable korma:

  • Add the prepped 2.5 butternut squash, 2.5 orange peppers and the 2.5 yellow peppers to the Instant Pot. Also add the 1250g of pumpkin along with the 10 carrots.
  • Throw in half the marinade ingredients along with 2.5 cans of tinned tomatoes.
  • Cook on high pressure for 7 minutes and use manual pressure release.
  • Remove ½ the vegetables and put to one side.
  • Add in the extra 2.5 cans of tinned tomatoes, the rest of the marinade and blend until smooth.
  • Stir in the drained 2.5 cans of chickpeas along with the garden peas and your reserved vegetables.
  • Load into freezer containers and wait for it to cool.

#6 Fridge Your Chicken Tikka Masala

Once the Instant Pot is back on cooking, mix your chicken tikka masala. Add all the masala ingredients into the marinade bowl, submerge the 5 large chicken breasts and place in the fridge.

#7 Batch Cook Your Curry Sauce

Once the Instant Pot is clean, you can make your curry sauce. Add to the Instant Pot:

  • 2 Kilos Butternut Squash
  • 500g Carrot
  • 2 Medium Onions
  • 250ml Vegetable Stock
  • Then throw in half your curry sauce marinade ingredients.
  • Cook for 4 minutes on high pressure and use quick pressure release.
  • Blend with the rest of the marinade until smooth and load into freezer containers.

#8 Tidy up

Use this time to tidy up your kitchen and then while the Instant Pot is cooking your time is free and you can have a rest!

#9 Batch cook your Butter Chicken

Once the Instant Pot is clean, you can make your butter chicken. Add to the Instant Pot:

  • 25 medium tomatoes, 2.5 large onions, 2.5tbsp tomato puree, 3 cans of tinned tomatoes and your 7.5 chicken breasts.
  • Give it a good coating of salt
  • Cook on high pressure for 5 minutes and then use quick pressure release.
  • Remove the chicken, add the other 2 cans of tinned tomatoes and blend the remaining ingredients of the Instant Pot.
  • Dice the chicken into bite sized pieces.
  • Stir in the 7.5tbsp Greek Yoghurt and add the chicken back in.
  • Add to your freezer containers.

Once the Instant Pot is clean, you can make your chicken tikka masala. Add to the Instant Pot:

  • 20 medium carrots, 10 large tomatoes and your marinated chicken breasts from earlier.
  • Cook on high pressure for 7 minutes and use quick pressure release.
  • Remove the chicken and using a hand blender, blend the vegetables to make a masala sauce.
  • Shred the chicken and add it back into the Instant Pot.
  • Add in 2.5tbsp of garam masala and 5tbsp of cumin and stir.
