I love pineapple. I think pineapple just adds a great sweet taste to recipes! So how about a pineapple bread recipe?
Pineapple bread
This pineapple zucchini bread is not my first pineapple bread here on Seduction in the Kitchen. I have another quick bread recipe that can also be called pineapple bread. That is my Banana Pineapple Chocolate Chip Bread {Irresistible Sweet Bread Recipe} That quick bread recipe is a little more indulgent than this pineapple bread recipe.
I wanted to change up a pineapple bread. I had an overabundance of zucchini and needed easy zucchini recipes. One zucchini recipe I know of is zucchini bread. So why not combine that with pineapple bread!
Quick bread recipe
When comes to bread making, I admit I like a quick bread recipe over the traditional yeast bread recipe. Why is it called a quick bread recipe?
It is because there is no yeast in the bread. Therefore you do not have to wait and let the bread rise. You mix the quick bread ingredients in a bowl pour and bake! That is all there is to an easy quick bread!
Zucchini bread recipe
Banana bread is the most common quick bread. However, another is a zucchini bread recipe. Zucchini is one of those summer garden veggies that can make a loaf of great sweet bread with.
Combining both a pineapple bread with zucchini bread recipe it was a no-brainer idea for me! This easy zucchini recipe really has a nice summer flavor with it. Plus with the pineapple in the zucchini bread recipe, it really gives it a new and exciting taste.

After baking up this zucchini bread with pineapple, I had to try it with a cup of coffee for a mid-morning snack. Pineapple and zucchini just work so well together! This zucchini pineapple bread is simply amazing!

Pineapple Zucchini Bread
Pineapple Zucchini Bread is a sweet zucchini pineapple bread. This easy quick bread recipe will be your new favorite with a cup of coffee! You will love this pineapple bread!

Ingredients
- 3 eggs
- 1 cup oil
- 2 cups sugar
- 2 teaspoons vanilla
- 2 cups shredded zucchini (squeezed and dried in paper towel)
- 8 ounces crushed pineapple (drained)
- 3 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ⁄2 baking powder
- 2 teaspoons cinnamon
- 1 cup golden raisins
- 1 cup chopped macadamia nuts
Instructions
- Beat the eggs, oil, sugar and vanilla until it is light and fluffy.
- Then stir in zucchini and pineapple to the egg mixture.
- Combine dry ingredients and blend until it is just combined.
- Next add in nuts and raisins and stir well.
- Pour the batter into 2 well-greased loaf pans and bake at 350°F for 1 hour or until firm.
- Cool in pan for 10 minutes, then take out the pan, slice it up and ENJOY!
