  • Always pre-cook vegetables. While you may be able to get away with putting uncooked pasta or rice into certain casseroles, this won’t work well when you replace them with low carb veggies. Vegetables release a lot of moisture, so if you put them in raw, either they will remain raw, your keto friendly casserole will be watery, or even both. Always cook them first.
